Array 10 assesses 180 foods in the form that they are eaten, meaning raw and/or cooked and incudes many foods that are not offered on other laboratory panels, such as gums (used in many gluten free foods), oleosins and meat glue. Because Cyrex is the autoimmune lab, they also included food proteins that are known to cross-react with human tissue and thus contribute to the autoimmune processes (aquaporins, shrimp tropomyosin, fish parvalbumin).
