Coconut Date “cookies”

- 1 cup shredded coconut
- 8 dates (pitted)
- 3 tablespoons chia seeds
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil (melted)
- sea salt (to taste)
Coconut date "cookies" are one of my favorites to bring to parties or feed my kids. Super quick and easy to make; they are always a crowd pleaser. Sweet and salty to your preference.
If there isn't enough moisture to keep the balls set then add a tablespoon or two of maple syrup. The moistness depends on the dates and it varies batch to batch.
|Step 1.||Place everything in a mixer and blend till mixed but still a little chucky.|
|Step 2.||Roll into 1-2" balls.|
|Step 3.||Coat balls in shredded coconut if desired.|
