Paleo Everyday Banana Cookies

Bananas and apples are used to sweeten these coconut-cashew based cookies. Full of protein and flavor, you can't miss with my Paleo Everyday Banana Cookies.


  • 2 cups cashews (pulverized into a powder)
  • 2 Medium bananas (yellow or brown - either will work)
  • 1 Medium apple (cut into quarters and remove core)
  • 3 tablespoons coconut flour
  • 3 tablespoons butter or oil (walnut, almond, coconut ...)
  • 2 eggs
  • 1 tablespoon baking soda
  • 1/2 teaspoon sea salt


  • 1 cup chocolate chips (or dried blueberries, or raisins, or chia or a mixture of all of them)


Step 1. Pulverize the cashews (or macadamia nuts or almonds) till they are a fine powder in a kitchen mixer.
Step 2. Sift the coconut flour, baking soda, and salt into the mixture.
Step 3. Add the bananas and the cored apple and blend till smooth.
Step 4. Add in softened butter or oil and the eggs.
Step 5. Blend all ingredients till smooth
Step 6. Gently stir in any optional ingredients like chocolate chips, dried fruit, chopped nuts, chia seeds, or whatever.
Step 7. Scoop cookie dough onto greased cookie sheet or sheet covered with parchment paper and back for 15-20 minutes at 350.
