Protein Packed Nut Butter “Cookies”

Fast, easy, 4 ingredient protein packed "cookies" that you'll be happy to eat and serve your kids.

Ingredients

  • 2 eggs
  • 2 cups nut butter (almond, peanut, or sunbutter)
  • 1/2 cup maple syrup
  • salt (to taste)

Optional

  • 1 cup almond slivers
  • 1 cup raisins
  • 1/3 cup chia seeds
  • 1/2 cup coconut (shredded)

Note

The raw dough, prior to adding eggs, will be sweeter than the cooked cookies so, when you taste it, ensure it's a little sweeter than you'll want in the finished version.

Directions

Step 1. Mix the nut butter, maple syrup and salt together and taste! If you want it sweeter you can either add more maple syrup or add some raisins or chocolate chips. Once you have the sweet and salt ratio that tastes good to you then mix in the eggs.
Step 2. Bake of parchment paper for 12-14 minutes at 350 degrees.
